![]() Why are we such creatures of habit when it comes to food? Starting tonight, step out of your comfort zone and try a twist to your cuisine. Veggie tacos was an idea I had for tonight's family meal and it was quick, easy and full of flavor. Here's how to make this quick and delicious meal in under 20 min: Ingredient List: (Makes 4-6 servings) 3 cloves fresh garlic and 1 onion, 1 tbsp. Bragg's Liquid Aminos, 11/2 cup of frozen organic broccoli, coconut oil, fresh salsa, 3 avocados, 1/2 lime, taco size tortillas, sea salt and pepper. *Cilantro and jalapeno pepper is optional when making the guacamole. Step 1: Chop all your fresh veggies and put aside. Cut the avocado in half and score cuts lengthwise in a checkerboard pattern so that you can easily scoop the chunks out with a spoon. Immediately squeeze 1/2 of fresh lime juice on the avocado to prevent browning that occurs through oxidation. Add 1 chopped clove of garlic and 1/4 cup onion, and 1 1/2 tsp of sea salt and 1 tsp pepper. *Avocados really need just the right amount of salt to bring out the flavor so be sure to taste test while making. Take 2 large skillets and put about 1 tbsp. of coconut oil each pan and bring to a medium heat. Step 2: Sautee your fresh veggies and frozen broccoli for about 10-12 min. Add the Bragg's Aminos while cooking. While the veggies are cooking in one skillet, lightly brown your tortillas in another skillet; about 1 min each side. Step 3: Make your tacos! Take your tortilla and fill it with your veggies. Top with a little shredded organic cheese and a dollop of greek yogurt or a drizzle of Annie's ranch dressing instead of sour cream (or just a small dollop of hormone-free sour cream) and voilà! You have a delicious and nutritious meal in no time. Fast food doesn't treat you this good. Enjoy!
